One reason why some fruits have only one seed is that every fruit is a ripened ovary. A seed is a ripened ovule inside of the ovary. This means that an ovary with one or more ovules develops into a fruit with one or many seeds.

Another reason is that plants with a greater chance of seed loss have a larger number of seeds, while plants that have a greater chance of success have fewer seeds. 

Do all one-seeded fruit have big seeds?

Usually, very small size seeds are produced in large numbers, while larger size seeds are produced as singles. Mango and avocado have the biggest seeds, followed by nectarine and apricot. Cherries have the smallest big seeds.
